RECIPE INGREDIENTS
4 tablespoons plus 4 cups oil
10x4 inch tortillas de Harina (flour tortillas)
5-oz mixture of chopped epazote, hoja santa, parsley, and cilantro; and minced leek
2/3 cup frijoles refritos (refried beans)
2/3 cup guacamole
14 oz fresh goat cheese, at room temperature, finely sliced
DIRECTIONS
Heat the 4 tablespoons of oil in a frying pan and fry the tortillas until crisp and golden. Drain on paper towels and set aside. Heat the 4 cups of oil in a deep-fryer. Make sure the herbs and leeks are dry, then deep-fry them for just a few seconds until crisp. Drain and set aside. On each tortilla, spread approximately 1 tablespoon of frijoles refritos, 1 tablespoon of guacamole, and the sliced cheese.
